What does it say about my control freak tendencies that it's actually easier for me to go into work for an hour when I'm coughing my lungs up to arrange stuff for later in the week than it is to phone in sick and then try and explain it all?

It is either control freak tendencies or the other staff is incompetent. I suppose you would know the answer to that, not me. :-)

They're not incompetent, they just wouldn't do things the way I wanted them done and also I just couldn't be bothered with trying to explain everything over and over till they did get things done almost the way I wanted them...
